There are severalrecipesof thecheese fondue. Most of cheese fondue recipesinvolve the use of egg yolks but not all. Plus, they existrecipeswhich involve the exclusive use of a single cheese ormixed cheese fondue.
Another difference lies in the presence of butter or milk and above all in the doses of these ingredients. In this article we propose somerecipealready tested by us, but we invite you to experiment with small variations in order to obtain the result that best meets your culinary ambitions.
Cheese Fondue Recipe:tomello or taleggio
In this first recipe, we propose the Tomello fondue. Tomello is a soft cheese, similar to Taleggio cheese, whose seasoning does not exceed a month and a half. Just like Taleggio, the outer part is thin and represents the shell of a very creamy cheese, with a bitter aftertaste on the finish.
With the same recipe it is possible to prepare thetaleggio fondue, of the ingredients you will have to replace only the tomello, to be used with the same dosage replaced by taleggio. Here are the ingredients and doses for 4 people.
- 300 g of tomello(or 300 grams of taleggio)
- 250 g of milk
- 4 egg yolks
- 50 g of butter
- slices of bread
- salt and pepper as required
- Cut the tomello (or taleggio) into cubes and put them in a bowl. Cover with milk.
- Let it soften for at least 2 hours.
- In a saucepan, melt the butter in a bain-marie, pour the tomello with the milk, mix the egg yolks and continue to mix until all the cheese is completely melted.
- Season with salt and pepper.
- Cook for another 5 minutes, over low heat and stirring, avoiding the mixture from boiling.
- Pour the mixture into a container and accompany it
with toasted triangles of bread.
The secret of fondue lies in the slowness and sweetness of mixing. Prepare the fondue over a very low heat.
How to serve the fondue
It all depends on the type of cheeseused. Incheese fondue recipethat we have proposed to you, we have usedTaleggio cheese or tomello, these are very versatile cheeses. There cheese fondueobtained is excellent to be served on croutons, with bread or with vegetables such as zucchini, aubergines or artichokes. It is also suitable for meat dishes but better white, thecheese fonduewith taleggio or tomello it can enrich chicken escalopes or grilled vegetables.

How to make bread filled with cheese fondue
Any kind ofFondue, even the one withmixed cheeses, can be served in a specially cut block.
After preparing the fondue, you should transfer it to the carved bread and place it in the hot oven (better if ventilated), at maximum power, for 5 minutes. You can enrich the cheese fondue with some aromatic herbs. In the oven, also place the bread crumbs cut into pieces so as to serve it with special skewers to dip it in the cheese and enjoy it.
How to make cheese fondue with fruit
Many types of cheese are offered to accompany fresh fruit! Melted cheese is great with pears!
The cheese fondue prepared with Camembertit is perfect to be served with vegetable crudités (carrots, fennel, peppers, tomatoes, broccoli… if you really don't want them raw, serve them just seared…), different breads and seasonal fruit.
If you prepare thecheese fonduein advance, you should have a special kit to serve it: thecheese fondueit should be served hot, when it cools, it tends to solidify.
There are very nice kits on the market, which involve the use of candles as a source of heat. These kits are used to keep the fondue at a creamy consistency longer ... however, if the fondue is to last the entire dinner, it will inevitably tend to thicken. If you need the cheese fondue to accompany the entire dinner, it is better to choose an electric stove.
